
POLLE BURRITO (MEXICAN CHICKEN WRAP)
Ingredients
4 flour tortillas/wraps
1 green pepper, cut into strips
1 onion, sliced
4 chicken breasts, skinless and cut into strips
1 tbsp ground cumin
1 tsp chili flakes
1 tbsp paprika
2 cups rice, cooked
1 cup chunky tomato salsa
Note
Serve with a side of guacamole, salsa and sour cream
Directions
Salsa
To make the authentic Mexican salsa, mix the salsa ingredients together in a bowl and season with salt and pepper.
- 2 tomatoes, diced
- 1 onion, diced
- 20g coriander
- 2 jalapeno chilies, diced
- 1 tbsp lemon juice
Guacamole
Peel the avocados and deseed the tomatoes. Put these and the coriander into a food processer and blend until they have reached a chunky consistency. Add the salt, pepper, chilies and lime juice to taste after and mix in with a spoon.
- 3 avocados
- 2 tomatoes
- ½ cup coriander
- salt and pepper
- lime juice
- 2 jalapeno chilies
- 1 big handful of coriander
Wrap Filling
- Toss the onion, chicken and pepper with spices and season with salt and black pepper.
- Stir fry the chicken and vegetables in a large pan with a tbsp of oil until done.
- Place equal amounts in the center of each wrap.
- Add the rice and salsa.
- Fold over two sides of the wrap and then roll up from the bottom.
