POLLE BURRITO (MEXICAN CHICKEN WRAP)

Ingredients

4 flour tortillas/wraps
1 green pepper, cut into strips
1 onion, sliced
4 chicken breasts, skinless and cut into strips
1 tbsp ground cumin
1 tsp chili flakes
1 tbsp paprika
2 cups rice, cooked
1 cup chunky tomato salsa

Serve with a side of guacamole, salsa and sour cream

Directions

Salsa

To make the authentic Mexican salsa, mix the salsa ingredients together in a bowl and season with salt and pepper.

  • 2 tomatoes, diced
  • 1 onion, diced
  • 20g coriander
  • 2 jalapeno chilies, diced
  • 1 tbsp lemon juice
Guacamole

Peel the avocados and deseed the tomatoes. Put these and the coriander into a food processer and blend until they have reached a chunky consistency. Add the salt, pepper, chilies and lime juice to taste after and mix in with a spoon.

  • 3 avocados
  • 2 tomatoes
  • ½ cup coriander
  • salt and pepper
  • lime juice
  • 2 jalapeno chilies
  • 1 big handful of coriander
Wrap Filling
  1. Toss the onion, chicken and pepper with spices and season with salt and black pepper.
  2. Stir fry the chicken and vegetables in a large pan with a tbsp of oil until done.
  3. Place equal amounts in the center of each wrap.
  4. Add the rice and salsa.
  5. Fold over two sides of the wrap and then roll up from the bottom.
