4 flour tortilla/wraps
3 skinless chicken breast fillets (470g)
3 cups lettuce
3 medium peppadews tm (sliced)
2 cups corn
1 sliced red onion
3 cups sliced cucumber
- Place a tablespoon of cooking oil in a non stick sauce pan and heat up on a medium/high heat.
- Rub the chicken in the Cajun spice, cook evenly and then cut into strips.
- Add the salad ingredients evenly to the middle of the wrap.
- Add the chicken and then roll up the bottom of the wrap and then each side.
Try adding a salad dressing for a zesty twist. Served hot or cold it’s a healthy treat. You can even take any one of your favorite salad recipes and roll it up in a wrap.
